Cheap and Cheerful January: The Grand Finale
Cheap and Cheerful January is coming to its cheap and cheerful close with another pasta dish, adapted from my absolute favorite salmon dish: salmon pasta in cream sauce. I oven bake, then flake beautiful salmon filets and make the butteriest, lemoniest, crème fraîche-filled sauced. I couldn't last a whole January without it, so I created a cheaper, cheerful-er version and I think you're going to love it!
Ingredients: Farfalle pasta, canned salmon, butter, sour cream, garlic, onion, lemon, salt, pepper, hot sauce, basil
Boil water and cook pasta according to package directions. Drain pasta and reserve about a cup of cooking liquid. To the same pot now add your thin-sliced onions and minced garlic with a bit of butter.
Cook gently until softened, then add in several spoonfuls of sour cream, along with the juice of one lemon, and salt and pepper it all. Stir and continue to cook gently until the sour cream has melted into a glossy white sauce, adding some reserved pasta water as needed. Now return the farfalle to the pot and stir to coat with sauce. Add in several dashes of hot sauce and stir once more to combine. Transfer your creamy pasta to a serving bowl and top with the flaked salmon and a generous sprinkle of basil.
